Our Favorite Fall Recipes Part 1

The weather is turning, leaves are falling, and pumpkins are popping up left and right. As we get deeper into autumn and closer to the holiday season, cooking and baking become even more relevant to what people are doing in their kitchens.

Fall fruits and veggies are abundant and we are all looking for some inspiration when it comes to staying well, enjoying life, and cooking healthy meals for our families and friends. It’s a great time to enjoy the change in season and different flavors available.

Some of the best fruits and veggies are harvested in FALL!

Throughout the end of summer and into fall, you can find fresh veggies such as cabbage, eggplant, pumpkin, squash, sweet potatoes, zucchini, kale, carrots, broccoli, beets, brussel sprouts, beans, radishes, turnips, collards, green onions, and lettuce.

You can also enjoy fall fruits like apples, pears, pomegranates, cranberries, figs, grapes, guava, key limes, kumquats, and passion fruit.

The best part is that you can combine all these wonderful foods into an abundance of healthy, hearty recipes throughout the fall and into the winter months! They are full of nutritious ingredients that will support your health and wellness today and every day…

In this blog post we are going to share some of our favorite fall recipes, varying in difficulty, sweet vs. savory, everything from desserts to breakfast foods perfect for the autumnal months ahead!

These recipes will help boost your immune system, help you sleep better, and have more energy overall.

Let’s start off strong with our favorite chili recipe!

Fall Favorite Chili Surprise

Chili is a great fall food that many people love for football season, and it makes for easy dinners. It is relatively inexpensive and can be dinner for two or three nights for those with busy schedules.
One of the best things about chili is that it's truly customizable to everyone's tastes, but no matter what variations you choose, it's always a hit.

Equipment

  • Crock pot (preferred method), or large soup pot

Ingredients
  

  • 3 lb Ground Beef
  • 1 Onion
  • 1 Jalapeño
  • 8 Cloves Garlic
  • 2 Cans Diced Tomatoes
  • 1 6oz Can Tomato Paste
  • 2 Cans Kidney Beans
  • 2 Cans Pinto Beans
  • 2 Cans Black Beans
  • Pinch Chili Powder
  • Pinch Cumin
  • Pinch Oregano
  • Pinch Himalayan Salt
  • Pinch Black Pepper

Instructions
 

  • Cook ground beef and drain fat before you add to crock pot or soup pan.
  • Chop and then sautee the onion, jalepeno and garlic.
  • Add vegetables in with the meat to the crock pot or soup pan.
  • Add cans of tomatoes, tomato paste and all beans.
  • Fill up the rest of your crock pot or soup pan with water (don't put in too much).
  • Add salt, herbs and pepper to taste

Notes

We recommend chopping fresh ingredients and cooking lightly over medium heat before adding into a crock pot (preferred method), or large soup pot. Then add in the rest of your ingredients and simmer on low heat for 1-3 hours for the perfect, rich chili flavor!

Pumpkin Ravioli

A delicious fall favorite that combines seasonal veggies with fresh pasta. If you are looking to save a bit of time, you can purchase wonton wrappers or similar pre-made dough.

Equipment

  • Medium Sized Bowl
  • Small Bowl
  • Fine Mesh Strainer
  • Knife
  • Whisk

Ingredients
  

Pasta

  • 2+ Cups All-purpose flour (recipe +plus more for surface)
  • 1/2 Tsp Kosher salt
  • 4 Large Eggs

Pumpkin Filling

  • 1 15 oz Can Pumpkin, or your own squash/pumpkin puree
  • 1/4 Cup Freshly grated parmesan
  • 1 Egg Yolk
  • 1 Tbsp Packed brown sugar
  • 1 Pinch Nutmeg
  • 1 Pinch Kosher salt
  • 1 Pinch Freshly ground black pepper

Instructions
 

Homemade Pasta

  • In a medium bowl, whisk together flour and salt.
  • Pour flour mixture out onto a clean surface.
  • Using your hands, make a well in the center of the flour.
  • Crack eggs into the well and use a fork to slowly whisk flour into eggs until a shaggy dough forms.
  • Use your hands to knead dough until it is smooth and no longer sticky, about 5 minutes.
  • Add flour to the surface as necessary to keep dough from sticking.
  • Wrap dough tightly in plastic wrap and refrigerate for at least 1 hour.
  • When ready to roll pasta, cut dough into quarters. Wrap all but 1 back in plastic wrap and place back in the refrigerator.
  • On a lightly floured surface, roll uncovered dough into a long rectangle about 1/4” thick.
  • Fold short ends of dough to meet in the center of the rectangle, then fold in half so that the dough is in quarters. Roll out again so the dough is 1/4” thick.

Pumpkin Filling

  • Drain pumpkin by placing it in a fine mesh strainer set inside a large bowl.
  • Cover the exposed pumpkin with plastic wrap, then place a small bowl on top to lightly press the pumpkin.
  • Let drain for 15 minutes.
  • When the pumpkin has drained, transfer to a medium bowl.
  • Add parmesan, egg yolk, sugar, and nutmeg and season with salt and pepper.

Putting It All Together

  • Lay one piece of dough out on a lightly floured surface. Spoon about 1 tablespoon of filling every 1 inch.
  • Using your finger, lightly wet in between each pile of filling with water.
  • Gently lay a second piece of dough on top and press between filling to seal, making sure to press out as much air as possible.
  • Using a biscuit cutter or knife, cut between each pocket to make individual ravioli. If desired, use fork tines to seal ravioli shut.
  • Repeat with remaining dough and filling.
  • Refrigerate until ready to cook.

Notes

The way you prepare and cook the ravioli is totally up to you! These do pair well with a nice red sauce, but would also be great with butter or served just how they are!

Don’t forget the apple tart!

Grandma's Favorite Apple Tart

We have all heard of the classic apple and pumpkin pies but what about an apple tart? This recipe is for a rustic apple tart served with a yummy caramel sauce.
Prep Time 1 hour
Cook Time 1 hour

Equipment

  • Oven
  • Mixing Bowl
  • Cooking Pan
  • Knife and/or Apple Corer

Ingredients
  

  • 1 Package Pre-Made Pie Dough
  • 4 Granny Smith Apples
  • 1.4 Tbsp Unsalted Butter (20 grams)
  • 3/4 Cup White Sugar
  • 2 Cups Apple Juice
  • 1/2 Cup Caramel
  • 1 Pint Vanilla Ice Cream
  • Pinch Cardamon

Instructions
 

  • Peel, core and quarter your apples, thinly slice the apple quarters, setting aside the end pieces and roughly chopping those for about ½ cup of chopped apple pieces.
  • Place peel and cores in a pan and set aside.
  • Arrange the apple slices in a circle on the crust, slightly overlapping, 4cm in from the pastry edge.
  • Spread chopped apple inside the circle, then arrange remaining slices in concentric circles on top, working towards the centre and overlapping slightly so there aren't any gaps.
  • Fold pastry edge over to create a crust, pressing to seal. Chill for 15 minutes.

Bake

  • Preheat your oven to 200 degrees and brush the edges of your pastry with butter.
  • Sprinkle the apples with sugar and bake for 40-45 minutes until a nice golden brown color appears.

Make Caramel Sauce

  • Meanwhile, add your apple juice and ½ cup of sugar to the pan with peels and cores. Cook over medium heat, stirring occasionally, for 20 minutes, then strain to separate from the solids.
  • Return to pan and simmer for a further 10-15 minutes, stirring occasionally, until syrupy.
  • Stir in your caramel and keep warm.
  • Pour your sauce over the top of your tart and serve with icecream!
